Already knew all this, and easy to do in WinZip as well, even on an already ziiped up file. However, I created a 7zip file, chose not to add a password, but then came back to it later to add a password and i can find no way of doing so, unless I recreate the zip file again from scratch and do it as explained above.
So my question is… How do you password protect a 7z compressed file already on your drive. ?

Recreate the zip using the steps involved. You cannot add the password after creating the ZIP.
