So, I have my PC running for multiple months and the data usage there shows WiFi 0, ethernet 0. So, either this feature is buggy in the current W10 builds or it just doesn’t work at all.

Once again a lengthy explanation of something most of us don’t need to know. When we do the usual problem “how do I discover this”?
OK you covered that, but in fact there is likely a deeper problem & it’s unlikely to be fixed by uninstalling high consumption apps, particularly since these may well be essential to get your work done.
My experience is that such “built in resource reporting” rarely help.
And remember when you do need the info you will almost certainly be starting from scratch.
